Taryn's Wreckreation Guide: BACONADAS at Bourbon & Bacon Fest

Hands down one of my favorite days of the year is Bourbon & Bacon Fest. This year's celebration of all things bourbon and bacon falls on Saturday March 11th, and  yesterday I had the opportunity to sneak a little peek at what we'll be feasting on in just a few short weeks.


Our tastebuds were completely spoiled by the Baconadas that Seattle's own Art Marble 21 brought to the station! This unique creation is exactly what it sounds like - an empanada-style dish stuffed with mouth-watering bacon. I managed to eat three Baconadas but stopped myself from taking a 4th - there were others and unfortunately I had to share... Here's what went down when owner Mike Kenney stopped by to serve up this phenomenal food!

The bacon is made from fresh pork belly from Salmon Creek Farms in Idaho Falls. It's marinated for 10 days in Art Marble 21's house Carribbean Jerk marinade, then cold smoked for 10 hours! After that, they slice it up and voila - jerk-bacon! The Baconada dough is made in-house, then filled with fire-roasted red pepers, potato, fresh thyme, roasted garlic, New Mexico pepper, and of course that fabulous house-made jerk bacon I can't stop gushing about. On the side, there's a Jamaican spice dip, which is tomato-based with sweet chili sauce, soy sauce, and a dash of Cayenne pepper. Personally, I LOVE spicy foods and this signature sauce really hit the spot! As you can see, Thee Ted Smith and I were beyond stoked about the whole process!

I'm told the chef is a Jamacian man named Winston, and if I ever meet him, I'll profess my love to him. We washed Winston's Baconadas down with Heritage Distilling Company's Elk Rider Blended Whiskey and the pairing couldn't have been more perfect!


I am so thrilled that Art Marble 21's Baconadas will be featured at Bourbon & Bacon Fest! If I could fast forward to March 11th, I absolutely would!
